I am familiar with how to look up oil/gas production per well (or lease) on the RRC, is there a way to look up how much WATER a particular well (or lease) produces, or how much salt water a particular well (or lease) disposes of on the Texas Railroad Commission website?

The volume of water produced or disposed of from wells isn’t reported to RRC. There is an annual report covering disposal wells showing the volume of saltwater injected but it doesn’t identify sources.
The well operator’s internal daily production report would include that by-well type information, at least the water produced side of it, but unless you own a working interest in the well, or as a royalty owner have provisions in your lease requiring the lessee to provide you that type production information, you probably won’t be able to see those numbers.
