I own mineral rights to 3 separate parcels, all in the same Oklahoma county. I want to transfer them to my son via a quit claim deed. Do I have to file three separate deeds in the county or can I put all three descriptions just on one deed?
one deed is adequate and advisable from a recording fee standpoint.

You might want to consult your accountant about the tax implications of transferring the deed(s) now or waiting until your death and your son may get a step up in value. That might be important for capital gains issues if he ever sold it down the line.
